Behind The Blend

This specialty-grade offering blends Castillo with other Colombian staples like Caturra and Catuai varieties, each selected for flavor and resilience. Sourced from elevations between 1,400–2,000 MASL and processed using Colombia’s classic washed method, it reflects the heart of the country’s coffee culture.

Developed by Colombia’s Cenicafé, Castillo is prized for both its disease resistance and cup quality. The hybrid thrives in Colombia’s volcanic soil and shifting microclimates, resulting in a profile that’s clean, fruity, and versatile.

Washed processing brings clarity and lift to the acidity, while gentle roasting highlights the bean’s natural caramel sweetness and smooth body. It’s everything you expect from a Colombian coffee but with a little more depth.

Brew It Like a Pro

This Colombian coffee adapts well to different brewing styles. Keep it fresh and experiment with your grind size to bring out the notes you love.

Start Strong:
– Whole beans, freshly ground
– Water temp: 195°F–205°F
– Adjust grind for method

Want more tropical brightness?
→ Try a coarser grind and brew closer to 205°F.
Prefer smooth, chocolatey depth?
→ Go a bit finer and brew at 195°F.

 


Brew Method 1: Espresso


Bold, bright, and creamy.

You’ll Need:
Espresso machine
Grinder
Scale

Steps:
Grind 18–20g of coffee fine.
Pull a 28–32g shot over 25–30 seconds.
Enjoy straight or with steamed milk for a smooth cortado or flat white.


Brew Method 2: Pour-Over 

Balanced and layered.

You’ll Need:
Pour-over dripper
Gooseneck kettle
Grinder + scale

Steps:
Rinse filter. Add 20g medium grind.
Bloom with 40g water for 30 seconds.
Add remaining 280g in slow pours over 2:30–3:00 minutes.


Brew Method 3: French Press

Rich and round.

 

You’ll Need:
French press
Coarse grind
Kettle

Steps:
Add 30g coffee, bloom with 60g water (30 seconds).
Add 390g water, stir, steep 4 minutes.Press slowly and enjoy.
