Behind The Blend

This specialty-grade offering is sourced from smallholder farms in southern Ethiopia between 1,800–1,900 meters above sea level. 

Heirloom Ethiopian varieties add genetic diversity, enhancing the coffee’s nuanced flavor profile and delicate aroma. The volcanic soils and unique microclimates of Guji contribute to its crisp acidity, juicy texture, and elegant finish.

Washed processing highlights the coffee’s bright citrus notes and floral complexity, while gentle roasting preserves its natural sweetness and soft caramel undertones. The result is a cup that’s both bright and balanced—everything you expect from a classic Ethiopian coffee, with added sophistication.

Brew It Like a Pro

Ethiopia Guji adapts beautifully to manual brewing methods. Keep beans fresh and experiment with grind size to emphasize the flavors you love.

Start Strong:

  • Whole beans, freshly ground
  • Water temp: 195°F–205°F
  • Adjust grind for method

Want more floral brightness?
→ Try a coarser grind and brew closer to 205°F.
Prefer smooth caramel depth?
→ Go a bit finer and brew at 195°F.

 


Brew Method 1: Cold Brew

Smooth, fruity, and refreshing.

You’ll Need:

  • Coarse ground coffee
  • Cold water
  • Mason jar or cold brew pitcher

Steps:

  1. Combine 100g coffee with 1L cold water.
  2. Stir gently and steep 12–16 hours in the fridge.
  3. Strain and enjoy over ice.

Brew Method 2: Pour-Over 

Balanced, bright, and layered.

You’ll Need:

  • Pour-over dripper
  • Gooseneck kettle
  • Grinder + scale

Steps:

  1. Rinse filter and add 20g medium grind coffee. 
  2. Bloom with 40g water for 30 seconds.
  3. Add remaining 280g in slow pours over 2:30–3:00 minutes.

Brew Method 3: AeroPress

Clean, crisp, and aromatic.

You’ll Need:

  • AeroPress
  • Grinder
  • Scale

Steps:

  1. Add 17g fine-ground coffee.
  2. Pour 200g water at 195°F–205°F.
  3. Stir 10 seconds, steep 1:30, press slowly, and enjoy.
